Looking for a fall treat that will have everyone singing your praises? I’ve got it! This quick and easy Pumpkin Spice Cupcake Recipe is guaranteed to make them smile!
With fall seeming to move along at record speed, It dawned on me that I haven’t yet made my family’s favorite fall treat. How did that happen??? I am a pumpkin spice everything girl so it’s ridiculous that I’m not on my tenth batch of these easy pumpkin spice cupcakes already!
I’m going to fix that right this minute! I am sharing the recipe below for those of you who can’t get enough of everything pumpkin.
Easy Pumpkin Spice Cupcakes
Ingredients
- 2 cups flour
- 1 and 1/2 cups sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
- 4 eggs beaten
- 1 cup vegetable oil
- 1 sixteen ounce can of pumpkin
Directions
- Mix together all dry ingredients in a large bowl until well blended.
- Add eggs, pumpkin, and vegetable oil and mix together for uniform color and consistency.
- Fill each cup 3/4 full.
- Bake at 350 degrees for 14 to 24 minutes depending on size (see above.)
- Remove from pan and place on a wire rack to cool completely.
- Frost with Cream Cheese Frosting.
A few years ago when we had our food cart, these cupcakes were in high demand during the fall and winter seasons. I started using the giant muffin cups to make sure that everyone got their money’s worth. I still tend to use those to this day for my family.
Cream Cheese Frosting
Ingredients
- 1 – 8 ounce package of cream cheese
- 1/2 cup of butter
- 2 teaspoons vanilla
- 4 and 1/2 cups of powdered sugar
Directions
- Mix softened cream cheese, butter, and vanilla in a large mixing bowl.
- Beat at a medium speed until light and fluffy.
- Gradually add powdered sugar and continue to beat 8 to 10 minutes until desired consistency.
I have used these cupcakes for gifts many times over the years. I am not a cake decorator by any means but I do like to pipe on the frosting when I’m sharing them with others. This cream cheese frosting is the perfect consistency for piping. Since I am far from a pro at that, I found a simple little piping pen that works wonders. Adding sprinkles and placing them in an individual box is perfect for gift giving.
