A few years ago when we had our food cart, these cupcakes were in high demand during the fall and winter seasons. I started using the giant muffin cups to make sure that everyone got their money’s worth. I still tend to use those to this day for my family.

Cream Cheese Frosting

Ingredients

  • 1 – 8 ounce package of cream cheese
  • 1/2 cup of butter
  • 2 teaspoons vanilla
  • 4 and 1/2 cups of powdered sugar

Directions

  1. Mix softened cream cheese, butter, and vanilla in a large mixing bowl.
  2. Beat at a medium speed until light and fluffy.
  3. Gradually add powdered sugar and continue to beat 8 to 10 minutes until desired consistency.

I have used these cupcakes for gifts many times over the years. I am not a cake decorator by any means but I do like to pipe on the frosting when I’m sharing them with others. This cream cheese frosting is the perfect consistency for piping. Since I am far from a pro at that, I found a simple little piping pen that works wonders. Adding sprinkles and placing them in an individual box is perfect for gift giving.
